Blackberry brioche with Clover Classic custard

Fresh Blackberry and lemon Brioche served with Clover Classic Custard

Ingredients:
Brioche
2 Cups Bread Flour
2 Tbsp Castor Sugar
1 pack Instant Yeast
1 tsp Salt
3 Large eggs
125 g Clover Butter, at room temperature
1 tsp vanilla extract
Zest of 1 Orange
1 ½ c Fresh Blueberries/Blackberries
1 egg, beaten for egg wash
Almond flakes for the top

Method:
Preheat the oven to 190oCIn a mixing bowl, mix together the sugar, yeast, eggs, zest orange and vanilla until well combined.
In a large mixing bowl, mix together the flour and salt until well combined.
Make a well in the centre and add the wet ingredients. Using a spatula or wooden spoon, start to mix the ingredients until a dough starts to form. At this stage remove the dough from the mixing bowl and start to knead for 5 – 10 minutes or until the dough is elastic. Once elastic, start to incorporate the butter, careful not to over knead to dough. Place the bowl in a greased bowl and let that proof for 45 minutes in a warm spot. Once the dough has doubled in size remove from the bowl al roll out to about 1 cm on a lightly floured surface into a rectangle shape. Place the berries evenly over the dough and start to roll into a sausage. Place in a greased baking tin, cover with a cloth and let that proof until tripled in size. Once proofed place in the oven for 30-40 minutes.

Lemon Glaze
1 Cup Icing Sugar
Juice and zest of 1 lemon

Mix until while combined and drizzle over the warm loaf.
Once cooled, slice into thick slices, spread over some Clover classic custard, place a dollop of fresh cream and Fresh fruit and enjoy!
