Clover Fresh Milk Pearl Barley Risotto
This nutritious grain is not just for soups. Our Fresh Milk Pearl Barley Risotto gives dining on a dime a whole new meaning, with all the creaminess and goodness of Clover Fresh Milk.
Ingredients:
2tbsp butter
1 tsp oil
1 onion, chopped
2 cloves garlic, chopped
1-2 sprigs fresh thyme or 1 T dried thyme
200g Pearl Barley
½ cup stock
1-2 cups Clover Fresh milk
Fresh herbs/grated cheese for garnish
Heat the butter in a saucepan and add the oil. Add the chopped onion and thyme sprigs. Saute until onions are translucent. Add the garlic, thyme sprigs and pearl barley. Allow to cook until the onions are translucent.
Add in the stock and simmer until the stock has evaporated, about 10 minute. Gradually add the Fresh milk, whilst stirring. Season with salt and pepper. Cover the Pearl barley with the fresh milk and place the lid on. Allow to cook until the pearl barley is soft and cooked through with a creamy consistency. Add a little more milk if it's too thick and starting to burn at the bottom.
Serve as a side dish or dish over roasted veg/cooked protein of choice and fresh herbs/cheese for garnish.
