Fresh milk Tuna fishballs with Zoodles

Fresh milk Tuna fishballs with Zoodles

X2 tins tuna, drained
1 egg (optional)
1 spring onion/1/2 onion, chopped
handful fresh parsley, chopped
salt and pepper
1 tsp grated lemon zest 
squeeze of fresh lemon
1 chilli, chopped (optional)
1/2c flour
 
Combine all the ingredients into a bowl. Form into balls and place into the fridge to set. Fry in greased pan until golden on all sides and set aside. 
 
2 T butter 
1 shallot, finely chopped
2 cloves garlic, crushed
1 T flour
1 C Clover Fresh milk
Salt and pepper
Squeeze of fresh lemon
Baby marrow noodles (zoodles)
 
Melt the butter in a saucepan, add the chopped shallot and garlic. Alow to cook for a minute. Sprinkle over the flour and gradually add the milk. Allow the sauce to slightly thicken. Season with salt and pepper and a squeeze of fresh lemon. Remove from the heat and toss in the zoddles and the fishballs.  Becareful not to overcook the zoodles, they must still have a bit of crunch. 
Serve warm with a garnish of fresh parsly and a lemon wedge.
