Olive Pride Chicken Casserole

Olive Pride One pot wonder Chicken Casserole

2 T Olive Pride Blend
1 red onion, peeled and cut into thin wedges
2 cloves garlic, roughly chopped
100g streaky bacon, chopped
Chicken pieces (5 piece or 8 piece)
100g mushrooms, roughly chopped
1 red pepper, roughly chopped
2 T tomato paste
2 bay leaves
x1 tin tomatoes
salt and pepper 
2 T fresh herbs of choice, chopped

Heat the olive pride blend in a casserole pot or saucepot. Add the onions, garlic and bacon (optional) and saute for a few minutes. Next add the chicken pieces and allow to brown on each side until golden. Add in the mushrooms and red pepper and cook the mushrooms until they are golden in colour. Add the tomato paste, bay leaves and tinned tomatoes and season generously with salt and pepper. Add water to the emptied tinned tomaotoes, swirl the tin to get the excess tomatoes and add to the chicken. Add in the fresh herbs and cook for a few minutes. 
Transfer to a casserole dish and cook in the oven for 30-40 minutes until the chicken is tender. Alternatively, cook on the stove top, for 15 minutes with the lid and 10 minutes without, to reduce the sauce.
Serve with pasta or rice.
Optional: you can also add an assortment of olives.
