Tropical white chocolate mousse

200g good quality white chocolate
1/2 cup Clover Tropika, any kind
1 cup cream, whipped

For garnish
4T toasted coconut
Jelly babies, to garnish
cocoktail umbrellas

Melt the chocolate over a double boiler, stirring until smooth. Pour in the tropika and mix through.
Remove from the heat and allow to cool until the mixture reached room temperature.
Once cooled, use an electric hand mixer to whip the chocolate mixture until slightly thickened, add the whipped cream and fold through in 2 batches before placing in the fridge for about 3 hours to set.
Once set add spoon the mousse in serving bowls, scatter over the toasted coconut and add the jelly people followed by the cocktail umbrella for the perfect beach setting.
