Veggie Nasi Goreng (Spicy Fried Rice)

Ingredients:
1 c basmati/Jasmine rice, cooked
2 T Olive Pride Blend
1 onion, sliced
2-3 cloves garlic, chopped
1-2 red chilli, chopped or 1 T chilli powder
1-2 carrots, chopped
½ c green beans, chopped
1 cup shredded cabbage
2 T soy sauce
2 eggs
Handful peanuts, toasted and chopped
Fresh coriander
Heat the Olive Pride Blend in a saucepan. Add the sliced onion, season with a pinch of salt and cook for a minute. Add the chopped garlic and chilli and cook through for another minute. Add in the chopped carrots and allow to cook for a minute. Next add the green beans and give it a good mix. Stir in the soy sauce mixing all ingredients together. Add in the cabbage and cooked rice and allow to cook for a minute,until all the flavours combine.
In a separate non stick pan, heat a little Olive Pride Blend. Add the eggs and fry them sunny side up. Season lightly.
Divide the veg fried rice amongst serving bowl, top with fried egg and garnish with chopped peanuts and fresh coriander.
